Assam Lemon and Green Chili Pickle

Any Assamese lunch is incomplete without a piece of ‘Kaji Nemu’ or Assam Lemon. This lemon is widely found and cultivated in the Indian state of Assam.
Today let us learn a pickle recipe with Assam Lemon and Chili.

Lemon Pickle

Assam Lemon and Green Chili Pickle

  • 5-6 Assam Lemon
  • 1/2 kg Green Chilies
  • 1/2 Cup Turmeric Powder
  • 3/4 Cup Salt
  • 1 Cup Mustard Oil
  • 2 Dry Red Chili
  • 1 tbsp Pas Phoran
  • 1 tbsp Mustard Seeds
  • 2 tbsp Vinegar


  • Wash the lemon pieces and green chilies and wipe them dry using a kitchen towel.
    Cut the lemons into small pieces.
    Cut the green chilies into small pieces.
  • Now, mix turmeric and salt with lemon and chili pieces.
  • Dry in sunshine for 2 days.
  • Now, heat mustard oil in a pan. Add 2 dry red chilli and pas phoron.
    Remove from flame.
  • Once oil cools down, add lemon and chilli pieces, and 1 tbsp mustard seeds. Mix well.
  • Keep the ingredients in the pan for a night.
  • Transfer the pickle in a clean glass jar.
  • Keep the pickle in sun for a week.
    Your pickle is ready.


Ensure that pickle is kept away from moisture.
Use dry spoon to serve pickle.
